What you need for that delicious scallop, salmon and prawn loaf.
Ingredients (serve 6-8 pers) 400g prawns 150g scallops 400g fresh salmon 2 egg whites 30cl almond cream a mix of coriander, chives and dill (2 tbsp each) 1 lemon salt and pepper.
Dice half the salmon, all the scallops and prawns together. Mix the other half of your salmon with the egg whites, salt and pepper. Pour in a bowl, add cream, sea chunks and herbs. Taste and check. Pour your mixture in a mould and place in a double boiler in the oven at 160 degrees for 40 mn. Let it cool and put it in the fridge for at least 24 h.
Serve with lemon drizzled sauce and a mixed herbs salad.
