Went to a party the other day where we had a wonderful « tarte au citron meringuée »…I thought to myself… Damned! Remember that time I used to bake all those Sunday cheesecakes…I should really start cooking them over again.
There’s the recipe: KEY LIME PIE
-250 g cinnamon biscuits
-50 g butter
-1 can of sweetened condensed milk
-3 egg yolks
-the juice of 5 key limes
Bake your crushed biscuits mixed with melted butter spread over the bottom of a tin.10 mn at 180 degrees.
Stir the other ingredients and pour over your cooled layer. Bake for 15 mn at 160 degrees.
you can top your pie with a meringue:
4 egg whites and 150 g icing sugar to beat until fluffy. When the pie is done, pour your meringue over and bake it for 10 mn same temperature then stop the baking and let it in the oven for 40 mn.
